  • 14 oz extra-firm tofu
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 tsp curry powder
  • 2 tbsp lime juice
  • 2 tbsp vegetable oil (canola or grapeseed)

Instructions

  1. Press the tofu between paper towels for 15 minutes, then cut into cubes.
  2. Heat vegetable oil in a pan over medium heat until shimmering. Fry tofu cubes for about 10-12 minutes until golden brown, then set aside.

  4. Add fresh spinach and cook until wilted (2-3 minutes). Pour in coconut milk and curry powder; stir well.
  5. Simmer for 10 minutes to blend flavors; add lime juice before serving.
