  • 1 ham bone or 4 oz bacon
  • 4 cups low-sodium vegetable broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons olive oil in a large pot over medium heat. Add onions, celery, and carrots; sauté for 5-7 minutes until soft.
  2. Stir in minced garlic and cook for another minute. Add rinsed split peas and mix well.
  3. Pour in the vegetable broth along with bay leaves and thyme. Bring to a gentle boil.
  4. If using a ham bone or bacon, add it now. Reduce heat to low, cover, and simmer for about 45 minutes until peas are tender.
  5. Stir occasionally; if too thick, add more broth or water to reach the desired consistency.
  6. Season with salt and pepper before serving. Remove bay leaves and garnish as desired.
