Instructions

  1. Preheat the oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper. Roast for about 25 minutes until tender.
  2. In a skillet over medium heat, sauté crumbled sausage in olive oil until browned (5-7 minutes). Add minced garlic during the last minute.
  3. Stir in roasted butternut squash and pour in heavy cream. Cook until heated through (3-4 minutes).
  4. Add cooked gnocchi and Parmesan cheese, stirring until the cheese melts and coats the gnocchi (3-5 minutes).
  5. Finish with chopped sage just before serving.
