- 2 medium zucchini, sliced into half-moons

- 1 cup cherry tomatoes
- 3 tbsp extra virgin olive oil
- Juice of 1 lemon (about 2 tbsp)
- 1 tsp dried oregano
- Salt and pepper to taste
- ½ cup crumbled feta cheese (optional)
Instructions
- Prepare the marinade by mixing olive oil, lemon juice, oregano, salt, and pepper in a bowl.
- Place chicken breasts in a resealable bag, pour the marinade over them, seal tightly and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat. Toss zucchini, bell pepper, onion, and tomatoes in olive oil with salt and pepper before grilling.
- Grill vegetables for about 5-7 minutes until tender. Remove from grill and set aside.
- Grill marinated chicken for about 6-7 minutes per side or until fully cooked through (internal temperature should reach 165°F). Let rest for a few minutes before slicing.
- Assemble your bowl by layering grilled veggies and sliced chicken; sprinkle feta if desired. Drizzle with extra lemon juice before serving.
