  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 red bell pepper, sliced
  • 2 medium zucchini, sliced into half-moons
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • ½ cup crumbled feta cheese (optional)

Instructions

  1. Prepare the marinade by mixing olive oil, lemon juice, oregano, salt, and pepper in a bowl.
  2. Place chicken breasts in a resealable bag, pour the marinade over them, seal tightly and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat. Toss zucchini, bell pepper, onion, and tomatoes in olive oil with salt and pepper before grilling.
  4. Grill vegetables for about 5-7 minutes until tender. Remove from grill and set aside.
  5. Grill marinated chicken for about 6-7 minutes per side or until fully cooked through (internal temperature should reach 165°F). Let rest for a few minutes before slicing.
  6. Assemble your bowl by layering grilled veggies and sliced chicken; sprinkle feta if desired. Drizzle with extra lemon juice before serving.
