  • 3 lbs pork shoulder
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 cup freshly squeezed orange juice
  • 1/4 cup lime juice
  • 2 tbsp adobo sauce
  • 1 cup low-sodium chicken broth
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In the Instant Pot on sauté mode, add oil and sear the pork shoulder on all sides (3-4 minutes each side).
  3. Remove the pork and sauté onions and garlic until translucent.
  4. Combine orange juice, lime juice, adobo sauce, cumin, oregano, and chicken broth in a bowl; pour over the pork.
  5. Lock the lid and cook on high pressure for 60 minutes.
  6. Once done, carefully release pressure and shred the pork with two forks in the pot.
