Ingredients

Scale
  • 1 cup almond flour
  • 1 cup powdered sugar
  • 2 tbsp cocoa powder
  • 3 large egg whites (about 90g)
  • 1/4 cup granulated sugar
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter (softened)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a bowl, sift together almond flour, powdered sugar, and cocoa powder.
  3. In another bowl, beat egg whites until frothy. Gradually add granulated sugar and whip until stiff peaks form.
  4. Gently fold the dry ingredients into the meringue until you have a glossy batter.
  5. Pipe circles onto prepared sheets, allowing space between them.
  6. Let them rest for 30 minutes until they form a skin.
  7. Bake for 15-18 minutes until they lift off easily.
  8. For the filling, mix peanut butter, unsalted butter, powdered sugar, and vanilla extract until smooth.
  9. Once cooled, match macaron shells by size and sandwich with filling.
