  • 1 cup brown rice
  • 1 medium onion, chopped
  • 1 cup bell peppers (red, yellow, or green), chopped
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • ½ cup guacamole
  • ½ cup sour cream

Instructions

  1. Prepare your ingredients by chopping the onion and bell peppers and mincing the garlic.
  2. In a medium pot, cook brown rice according to package instructions (about 45 minutes).
  3. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers for 5-7 minutes until softened; add garlic and cook until fragrant.
  4. Push veggies to the side and add ground beef to the skillet. Cook until browned (8-10 minutes), breaking it apart as it cooks.
  5. Stir in taco seasoning and black beans; heat through for about 3 minutes.
  6. Assemble bowls by layering rice, beef mixture, cheese, guacamole, sour cream, and any additional toppings you like.
