  • 1 cup quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 bell pepper (any color), diced
  • 1/2 red onion, chopped

  • Juice of 1 lime (about 2 tbsp)
  • 3 tbsp olive oil
  • 1 tsp cumin
  • Salt to taste

Instructions

  1. Rinse quinoa under cold water until the water runs clear. In a pot, combine quinoa and 2 cups water. Bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes until water is absorbed. Let sit covered for another 5 minutes.
  2. While quinoa cooks, chop bell pepper and red onion.
  3. In a bowl, combine the cooked quinoa, black beans, diced vegetables, and cilantro.
  4. Whisk together lime juice, olive oil, cumin, and salt in a small bowl. Pour the dressing over the salad and mix gently.
  5. Serve immediately or refrigerate for an hour to enhance flavors.
